Lactose free strawberry raisin cookies

The strawberry lactose free cookies are ideal as snack or a great alternative for raisin bread.


• 150 g raisins
• 250 g soy yoghurt natural
• 150 g fresh strawberries
• 250 g spelt flour
• 2 eggs
• 1 tsp baking soda
• 1 tsp stevia


1. Preheat the oven to 175 °C.
2. Mix the yoghurt and the eggs until you get a smooth dough.
3. Beat in the flour, stevia and baking soda.
4. Cut the strawberries in small pieces and add them with the raisins in the dough.
5. Mix the dough with a spoon.
6. Put some dough balls on a baking tray covered with baking paper.
7. Bake 20 minutes on 175 °C.
8. Cool down on a wired rack.
